lazy day dinner: quiche

Eggs and I have a sketchy past. I'm really not picky about many foods at all, but scrambled eggs have never been a favorite of mine. Since my mother taught me excellent manners, I should really say, "I don't particularly care for scrambled eggs."

Anyhow, because of this little preference,  I am hesitant to make many breakfast casserole recipes, or other eggy baked things, but this quiche changed my dinner rotation forever. Fear not egg-o-phobes, this recipe is not eggy at all, just rich, savory, and all-in-all perfection. 
This is so good. Really really good. I made it twice in a row last week, and I want to make it again right now. I just so happened to have an extra pie crust laying around from Selah's birthday party (which I will one day blog about), but feel free to make your own if you are so inclined. I'm sure it will make it all the better. 

This is an adapted by moi, Paula Dean Recipe:

Spinach and Sausage Quiche
6 eggs, beaten
salt, pepper
1 pkg drained frozen spinach
1 1/2 c shredded sharp cheddar
1 1/2c milk
1 lb chopped jalapeno sausage
unbaked pie  crust

Beat the eggs and milk really well together, then mix in all the other ingrediants. Pour into an unbaked 9" pie shell and bake at 375 for 45 minutes.

  3. How weird, I just happened to check your blog while I'm doing what??? Precooking the bacon for the quiche I'll be making in the morning. Yay for quiche. Hope you and yours have a very Merry Christmas :)
